We will likely upload some “post-mortem” Carpmas stuff tomorrow… on… ummm… well we could call it Day 11… but we won’t!  

We are having Wild Pacific Salmon for Dinner (in lieu of carp).

Albert and his beautiful Mother-In-Law, Marcela, prepare carp and potato salad for a scrumptious Christmas Eve Dinner, 2007.

 

I found this recipe for Potato Salad that I am going to serve up with our Christmas Eve Carp-style meal. It won’t be Carp… but rather Salmon.

 

 

Chunky Potato Salad

  • 6 cups cubed cooked potatoes
  • 4 large boiled eggs
  • 1 cup celery, chopped
  • ¼ cup sliced radishes (optional)
  • 4 green onions, chopped
  • 1 tsp parsley

Place in bowl and chill. (Approx 20 minutes)

Dressing:

  • 1 cup Miracle Whip
  • 1 tsp vinegar
  • 1 tsp mustard
  • 2 tsp sugar
  • ¼ cup evaporated milk
  • 1 ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp onion powder

Stir together in bowl. Mix into potato mixture.

Sprinkle crumbled bacon or bacon bits on top.

 

 

Had to improvise so that Tom would eat it. He does not believe that mayonnaise has any business being anywhere near a potato. No mayo - just more cream and vinegar instead.

In the Czech Republic, Christmas is celebrated on 24 December. The traditional Christmas meal is fried carp and potato salad. Several days beforehand, fishmongers with tanks of live carp appear on every street corner, and everyone goes to get their Christmas carp. Some people have them killed, cleaned and prepared right away. Others choose to take them home live, and let them swim in the bath until it’s time for Christmas dinner.
 
Every day can be like Christmas if you make it so.

Like attracts like.

 

I asked my friend Michelle if she would be interested in writing this year’s Carpmas Carol (I was struggling) and she jumped at the task. It took her less than 15 minutes to come up with this gem.

 

Here is the sheet music if you would like to play along (easy enough even CHARMAINE can play it). The music needs to be repeated a bit to make it work with the fourth stanza.
